🥃 Distillery Manager – Scotch Whisky Production

📌 Overview

We are recruiting on behalf of a highly respected Scotch whisky producer for an experienced Distillery Manager. This is a senior operational leadership role responsible for overseeing end-to-end distillation operations, driving performance, and leading the distillery into its next phase of growth while respecting tradition.

⚙️ Key Responsibilities

  • Lead all day-to-day distillery operations from raw materials to new make spirit

  • Deliver the annual production plan safely, on time, and to quality standards

  • Own distillery budgets, cost control, and efficiency improvement strategies

  • Drive performance across key metrics: yield, cost per LA, quality, energy & water intensity

  • Champion safety, compliance, and regulatory adherence (COMAH, DSEAR, ATEX, HMRC)

  • Provide strong technical leadership across mashing, fermentation, and distillation

  • Lead, develop, and engage distillery teams across shifts

  • Support continuous improvement and capital investment projects

  • Build strong relationships across engineering, warehousing, procurement, and governance

🎓 Experience & Qualifications

  • Degree in Brewing & Distilling, Engineering, or Science discipline

  • Proven experience in distillery, brewing, or process manufacturing leadership

  • Strong technical knowledge of distillation or chemical processing

  • Demonstrated success leading teams in a 24/7 operational environment

  • Excellent knowledge of H&S, process safety, and compliance frameworks

  • Commercially aware with strong stakeholder management skills
